June 2023 Business of the Month: Hidden Peak Provisions
Locals Sarah and Tom met in Park City when their paths crossed while working in the food and beverage world. Both also originally from the east coast, they landed in Utah permanently after discovering The Greatest Snow on Earth. Each came to Utah to snowboard and then stayed.
Now residing in Midway, the couple owns and operates a catering business and specializes in private catered chef dinners. After several successful years with private dinners and catering events, Sarah and Tom decided it was time to expand into a new dining venture. Knowing they wanted to open a local restaurant, they realized there was an opportunity for a local sandwich shop.
After finding the quaint space and convenient location along Midway Main Street, the new Hidden Peak Provisions local sandwich shop opened in December 2022. Everything is made in-house and from scratch using locally-sourced items and ingredients. Sarah and Tom made their restaurant space to “feel like home” with some fun and unique ingredients on the menu. They operate a private kitchen space in Heber City where they craft and create their delectable creations.
The Chicago Sandwich and Turkey Club are both customer favorites, but all of the menu features local Heber Valley Meats, lettuce, peppers, and eggs from a local and nearby farmer, breads from both Red Bicycle and Hawk & Sparrow, cheeses from Park City Creamery, and kombucha and local brews from Salt Lake. A small retail section of the restaurant includes products from Ritual Chocolate, Pink Elephant Coffee, and several other local goods. Hidden Peak Provisions also offers charcuterie boards with house cured and imported meats, and there is also a fermented flight showcasing all fermented foods done in-house and served with sourdough bread. There are vegan and vegetarian options too. And the soup du jour is made in-house and changes each day.
As for dessert, the couple makes from-scratch whoopee cookies with fun flavor profiles that change each week. Each gourmet sandwich comes with a side item like potato salad and pasta salad. The pasta salad is a beloved family recipe. And the menus are seasonal and based on local farmer's crops, so they change with the season.
“Sandwich time” is around noon each day. The small staff stays busy during the lunch hour, so calling ahead works great to ensure a short wait when you arrive. Along with seating inside, there is an inviting outdoor patio area. Hidden Peak Provisions is open Thursday through Monday from 11:00 AM to 5:00 PM. Brunch is served on Sundays.
